Takes place at the beginning of October. We work with two vineyards (hence the name 2 Finques) and select the best grapes, based on good healthy vines and optimum levels of ripeness.

winemaking
|
Vinification takes place with temperature controlled fermentation at 28 – 30 ºC. The wine remains in vats for a further 22-25 days, giving good wine colour and polyphenolic content, and with regular quality checks.

ageing
|
The wine is aged entirely in French oak barrels for 15 months before bottling.

tasting notes
|
COLOUR: Deep dark cherry – maroon colour
NOSE: Intense nose with subtle toasted and mineral notes, integrated with ripe dark fruit aromas and hints of spices (chocolate, cinnamon, liquorice) as well as balsamic and perfumed oak touches.
TASTE: Powerful, complex ,smooth and well structured with rich ripe fruit flavours.
The spicy, balsamic and light mineral notes from the nose continue on the palate.
Good level of acidity allowing good ageing, with smooth ripe and well integrated tannins.
This is a full bodied, well structured wine with excellent balance between fruit, acidity and oak, leading to a long smooth finish rich in concentrated spicy notes and Mediterranean aromas.
