Cold maceration of the grapes for 24 hours at 5ºC.
Fermented in new Allier French oak barrels for 32 days at 15°C.
After fermentation is complete, the wine stays in the barrels on the lees for 6 months with a weekly battonage the first three months, and a fortnightly battonage the final 3 months.

Tropical fruits accompanied by rich fruits like peaches and apricots, with hints of honey and quince.
Long and complex.

In the mouth we notice the same elements detected in the nose.
It is a long and well defined wine. It goes well with most dishes, especially rice, pasta, roast vegetables, fish dishes with sauces, fish stews, foie gras, white and read meats, casseroles, semi cured and cured cheeses and cured meats.
